Ingredients

4 Pheasant breasts

1 Large Green or Red pepper

1 Large Onion

2 Leeks

1/2 a head of broccoli flourettes

2 Cloves of garlic

1 Large teaspoon of Hot Chilli powder

1 Large teaspoon of Paprika

1 Large chilli

1 Pint of Chicken Stock

A sprig of Basil

12oz rice

Olive Oil

Spicy Pheasant Rice Mix

Serves 4

  1. Dice the pheasant breasts and fry in oil.
  2. slice the onions and add to the pan until the meat turns white and the onions are cooked.
  3. Dice the pepper and leeks, chop the broccoli flourettes.
  4. Then add to the frying pan with the crushed garlic, spices and finely chopped chilli.
  5. Stir well and cook for approximately 10 minutes until the vegetables start to soften.
  6. Add the rice to the pan stir in for 1-2 minutes.
  7. Then add the stock mixture, making sure all of the rice, is covered by the liquid.
  8. Leave to simmer for a further 15 minutes, stirring approximately every 5 minutes.
  9. Serve when most of the liquid has been soaked up and the rice is fluffy.
  10. Garnish with Basil and serve.
