Ingredients
4 Pheasant breasts
1 Large Green or Red pepper
1 Large Onion
2 Leeks
1/2 a head of broccoli flourettes
2 Cloves of garlic
1 Large teaspoon of Hot Chilli powder
1 Large teaspoon of Paprika
1 Large chilli
1 Pint of Chicken Stock
A sprig of Basil
12oz rice
Olive Oil

Spicy Pheasant Rice Mix
Serves 4
- Dice the pheasant breasts and fry in oil.
- slice the onions and add to the pan until the meat turns white and the onions are cooked.
- Dice the pepper and leeks, chop the broccoli flourettes.
- Then add to the frying pan with the crushed garlic, spices and finely chopped chilli.
- Stir well and cook for approximately 10 minutes until the vegetables start to soften.
- Add the rice to the pan stir in for 1-2 minutes.
- Then add the stock mixture, making sure all of the rice, is covered by the liquid.
- Leave to simmer for a further 15 minutes, stirring approximately every 5 minutes.
- Serve when most of the liquid has been soaked up and the rice is fluffy.
- Garnish with Basil and serve.
