Cajun spiced barbecued breast of Pheasant

A simple quick way to enjoy the king of game birds. In this recipe we are going to be using the breast only cooking them lightly on a BBQ or in a grill pan. The gamey flavour of the pheasant marries well with the spicy Cajun seasoning and when we paired this with a cool fruit salsa or yoghurt based dipping sauce the flavours compliment each other. The cooling of the sauces cleanses the pallet comfortably after the harshness of the spice and adds to the summery feel of this dish.

Ingredients

4 Pheasant breasts

4 Pheasant breasts

20g Cajun spiced

50ml vegetable oil

Mixed leaf salad

Virgin Olive oil (for salad dressing)

Notes

Cajun spiced barbecued breast of Pheasant

Method

  1. Remove skin from pheasant and trim away any excess fat.
  2. Mix together vegetable oil and Cajun spices
  3. Dip each breast in this mix and place in a large sandwich bag finally adding any mix you may have left over.
  4. Tie the bag up and place in fridge over night (the bag will keep the meat suspended in the marinade as long as you turn it every now and then).
  5. Cook on a hot grill pan or BBQ making an ice criss cross pattern on top of the meat. Once you have the pattern place in a hot oven for 6 mins to finish cooking.
  6. Allow to rest for 5 min then cut and serve with a dressed leaf salad and one of the following salsas or dips.

Mango Salsa

1 large mango
½ red onion
Coriander
Lime juice

  1. Cut mango into a small dice. Finely chop red onion and coriander.
  2. Mix all ingredients together adding the juice of lime and keep cold until you come to use it this will improve the flavour.
