1 smoked pheasant

mushrooms

4 volauvents

redcurrant jelly

Cooking Time: 0 Hours & 0 Mins

Cook the pheasant for 20 mins at 180c. Remove and leave to cool. Meanwhile slice the mushrooms very thinly and cook in butter & olive oil. Keep warm .

Cook the volauvents until risen and golden.

Carve the pheasant breast and legs thinly.

Serving Suggestion

Put 1 volauvent on a plate and put some of the mushroom mixture in it.

Then arrange a fan of the smoked pheasant beside it.

Garnish with red currant jelly.
