A quick delicious supper dish. Most of the preparation comes in making the damson puree.

Pheasant breasts x 2

Butter for frying

Salt and pepper

2 tbsp Brandy

Damson puree from 3/4lb damsons poached in 4oz sugar & 2 tbsp water

Notes

Cooking Time: 0 Hours & 15 Mins

Melt butter in a frying pan

Place 2 x breasts into the pan.

Brown lightly on both sides, open out a bit more and brown exposed areas.

Add brandy & flame

Add damson puree so that the breasts are lightly covered all over.

Cook gently for approx 10 mins

Add more puree & boil up just before serving.

Serving Suggestion

Good with saute potatoes
