Description
There are times when pheasant has been served so often that it seems commonplace. Here is a recipe which creates a new interest for those of you 'drowning' in pheasants.

4 Pheasants

1lb 2oz / 500g mascarpone

4 bunches spring onions (chopped)

2 cloves garlic

oil

butter

1/2 pint / 275 ml madeira wine

rosemary

salt and pepper

Cooking Time: 0 Hours & 40 Mins

Braise the four pheasants with olive oil, salt and pepper and rosemary for about 30 minutes.

Soften the spring onion and crushed garlic cloves in some oil and add the juices from the cooked pheasants to this.

Add the carved pheasant with the mascarpone and madeira to the pan and heat gently for about 10 minutes.

Serve with rice and peas.
