Description
Fallw venison steaks are delicious, a dark meat and can be served rare if you like your steaks like that.

Ingredients

8 fallow deer steaks approx 4 oz / 110g each

2 tbsp olive oil

3 tbsp of port or wine (or stock)

bunch of watercress

salt and pepper

Notes

If direct from a stalker allow 3 to 4 lb / 1.35 to 1.8kg of best end or loin of venison

Ask your butcher to bone out the meat and remove all the fat from each steak to leave a 'noix' of meat (or you can do this yourself). Cut this fillet into steaks or alternatively there are prepared steaks now available in many butchers and even supermarkets.

Allow roughly 4 oz / 110g of venison steak per person

Cooking Time: 0 Hours & 5 Mins

Season the steaks with pepper.

heat the pan until hot, add a little oil and cook the steaks very fast for about 1 1/2 minutes on each side.

Season with salt and dish up on a hetaed dish.

Add the wine or port (or stock) to the pan, swirl it round to take up the tasty juice and pour this over the steaks.

Serving Suggestion

Serve as you would normally serve steak with your preferred accompaniments.
