Ingredients

6 Venison Steaks

75ml Grand Marnier or other Orange Liqueur

50gm chopped Shallots

50gm butter

50gm flour

pinch Tarragon and pinch Parsley plus seasoning

450ml orange juice

25gm sugar

Notes

Venison Steaks with Orange

Preparation Time: 0 Hours & 0 Mins

Cooking Time: 0 Hours & 20 Mins

1. Marinate the steaks overnight in the Grand Marnier.

2. Cook the shallots in butter for one minute (don't brown), remove from heat, add flour and cook for a few minutes, stirring. Remove from heat, add boiling stock, herbs and seasoning and bring slowly to the boil and cook for 3-4 minutes, stirring.

3. Remove the steaks from the marinade, saute in a little butter for 4 minutes on each side, remove from frying pan and keep warm.

4. Add orange juice to the pan, then add the sauce and bring to the boil. Add sugar and pour sauce over steaks.

Serving Suggestion

Serve with new potatoes, batton carrots and mange tout.
