We are The Queen's Head Brandeston in Suffolk. It is our intention to focus on game as much as possible once again this year. This will be helped once the local shoots start. In the village here, a piece of land has been donated to local gentlemen for them to shoot. They gather their goods and share. Some make its way to the pub for our menu. After the shoot its down the pub for dinner. They warm by the fire and chat about the ones that got away. Chef treats the guns, their guests and the beaters to a two course dinner of his choosing. This is my third winter at the pub and our second shoot season with these guys. Our Pheasant dish was featured in a copy of The Suffolk magazine last year and was praised by all who selected it. We are doing a hare wellington on our new menu and plan to fill the board with specials such as Venison casserole with braised red cabbage, rabbit in pancetta with dauphinoise, pheasant breast with wild mushroom farce and rosti potato along with seared pigeon breast with beetroot chutney.
