Our restaurant of the month is at the 250 year old, Annandale Arms Hotel in Moffat, which is open to both resident and non-residents. Chef Margaret Tweedie ensures only the best, seasonal and local produce is on the menu, to tempt the customers back each time and is constantly looking at new ways to serve the popular game dishes. Unsurprisingly, the restaurant was awarded a Real Food Award - Dumfries & Galloway 2009 which reflects her innovative culinary skills. Margaret is also proud of the special wine and whiskey list, so you may find it handy to know you can stay in one of the hotels recently refurbished bedrooms.

  1. Name of Chef:
    Margaret Tweedie

  2. Chef’s Favourite Game:
    Venison and Pheasant

  3. Chef’s favourite tipple to go with game:
I would recommend  a good robust Claret or Burgundy such as Ch.  La Courolle 2005, or a Gevrey Chambertin Premier Cru Bel Air 2000, Domaine Taupenot-Merme, equally from the Varietals. You could do no better than Muddy Water Pinot Noir 2006.

  4. What types of Game are served on menu?
    Venison
    Pheasant
    Pigeon Breast
    Game Pie

  5. Is game a popular choice?
Very popular with both visitors and regular guests, Scotland is renowned for its game and we are constantly looking for new and innovative ways to serve it.

  6. Where do you get your game from:
Mainly our local supplier – Barony Country Foods, Dumfries. Some from Caledonia’s Larder and Braehead Foods.

  7. What is your signature dish on the menu?
Roast loin of ‘Barony’ venison stuffed with onion, mushroom, Garlic, breadcrumbs, herbs, chicken liver, barded in crepinette. Set on celeriac mash with roast root vegetables with a red wine jus.

  8. Is the fact that game is a seasonal dish a positive factor?
It is our express policy to use seasonal and local ingredients where possible and this appeals to our guests.  So having an ingredient that is so obviously seasonal helps to ring the changes.
