The Countryman Inn is a traditional rural hostelry with warming log fires in the winter, fantastic open country views, a cosy bar and an award winning e a la carte restaurant. The menu reflects the changing seasons and offers good hearty home cooked dishes of traditional rural food all year.
Whenever possible local produce is used. Free-range meats and garden vegetables from local farms are flavoured with home grown herbs, and fresh fish is supplied from boats working out of Shoreham and Newhaven. Dishes such as Braised Rabbit, Roasted Pheasant, and Game Pudding are regular features on the specials board during the winter, with minted lamb being a firm favourite during the spring. Why not try starting with homemade pate or a tomato & mozzarella salad with fresh basil, and finishing with a lemon syllabub or hot steamed treacle sponge. For the smaller appetite there are a range of bar snacks that include traditional ploughman’s lunches and healthy options such as the countryman smoked salmon, feta cheese and olive mixed leaf salad. Whatever the choice, you can be assured of freshly prepared quality food served with a smile.
With over 30 wines from around the world, a minimum of 3 cask conditioned ales, and freshly ground coffee always available, the Countryman Inn is warm and welcoming.
Situated 1 mile south of the A272, located outside of the main village at the junction of Smithers Hill Lane and Countryman Lane.
Shipley Mill is about 1 mile from the Countryman and can be reached by a gentle walk along a woodland bridle path. Shipley is an eight-sided smock mill, so-called because she is supposed to look like the old-fashioned farm labourer's smock, and is open on selected dates from April – October.
The hamlet of Shipley is surrounded by over 3,500 acres of farmland owned by Knepp Castle Estate. The Estate owners have embarked on a long term ‘Re-wilding’ project of returning the farmland back to it’s natural state by introducing Fallow deer, free roaming Tamworth pigs, Exmoor ponies and English longhorn cattle. This coupled with a return of wild grasses and shrubs has already encouraged many species of wild birds to start nesting, and some can even be seen in the Countryman garden.
